Happy (late) Birthday David

Yesterday was David’s 26th Birthday. He sure is getting to be an old man. :) It wasn’t a day unlike most others. He got up, went to work, and then came home. But, we go out last night. David’s sister Angie and her family came down, as well as His Dad and younger sister Rachel. Also our friends Kim and Chris came up from Corvallis with their daughter Hannah. We went to dinner at a restaurant called Momiji. It was delicious. Everyone seemed to have fun. After dinner we came back to our apartment for dessert. I was a little apprehensive about dessert because I made an ice cream cake. Now, David’s family LOVES Dairy Queen ice cream cakes. They have one for EVERY birthday. I was going to get one, but then I saw that they cost almost $30.00 for a darn cake. Granted they are good, but not that good if you ask me. So I decided to try and Google how to make an ice cream cake. It is super easy, AND I got a set of Spring Form pans out of it. Which is fun in and of itself. :) Anyhow, David’s family loved the cake, it was a major success. And, it only cost me $21.00, including the cost of the pans. YAY! :) If you are wondering, at the bottom of this post I will explain how I did it. :) After we had dessert, everyone played on the Wii Fit, and Kim and I actually escaped to Tucker’s room with the babies where it was quieter. It was nice to be able to sit and talk with Kim for awhile. We haven’t seen each other much since Hannah has been born. David seemed to have an enjoyable birthday, and I am glad! :) Below are some pictures for your enjoyment…

We wanted to see what Tucker would do while she was in her car seat. He wanted to play with her so bad he tried to get into the seat with her. That is why Kim’s arm is holding it down, and David is behind Tucker.

Here is one of Hannah just chillin’ in her seat. I think she is just too cute for words. :)

Hannah Blevins (2)This last one is Tucker in his new favorite place to play. This is our entry way. He loves to slap the floor with his hand and make noise, and I think he likes how much cooler the floor is than the carpet. He’s such a funny kid. :)

Ice Cream Cake

1 package oreos (separate 12 from the package)– I used the double stuffed

1 gallon Vanilla or Chocolate ice cream – I used the Safeway Lucerne Brand

1 gallon any other favorite ice cream – I used Cookies-n-Cream Safeway brand

1 stick butter

1 bottle chocolate sauce

1-Large tub of cool-whip

1 Spring Form Pan (10 – 12-inch)

 

Place the vanilla ice cream in the freezer for about 45 minutes to an hour

Remove ice cream from freezer when soft enough and pour into a mixing bowl.

Mix ice cream until smooth enough to pour into pan.

Pour into pan.

Place in freezer for 1-hour.

Right before removing pan from freezer melt the cube of butter in the microwave.

Take the remaining Oreos in the package and grind them as small as possible. (I used my mini-processer, you can use a blender or put them in a zip-loc bag and beat to a pulp with a rolling pin)

Mix Oreos with the butter until well blended.

Mix enough chocolate syrup as you want. (I forgot to use the chocolate syrup in mine, and I actually really liked it without it. But, I did have a few people say that it would have been good with the syrup)

Remove cake from freezer

Pour Cookie mixture onto cake and smooth evenly

Place in freezer for another hour.

At this point pull the 2nd carton of ice cream out and place in the refrigerator.

Right before removing the pan from the freezer, remove the ice cream from the freezer and place in a mixing bowl

Mix ice cream to the same consistency as the first gallon.

Remove the cake from the freezer and pour ice cream onto the cake and smooth evenly

Place in the freezer for another hour

Remove the cake from the freezer and frost with the whipped cream

Separate 6 of the Oreos and garnish the sides of the cake

Separate 2 more of the Oreos and place evenly apart on the top of the cake

Break the 4 remaining Oreos into pieces and sprinkle on the top of the cake.

Place the cake in the freezer for at least 3-4 more hours for everything to set up.

Serve and Enjoy!

Aww I love the pic of Father and Tucker! They DO look so much alike!!! How cute! Chloe is jealous of Tuckers girlfriend. Haha.

Happy Birthday David. Those are some cute pictures. That's so funny that Tucker likes the entry way. The other day I had Carson in the kitchen on a blanket and I look over and he's moved off and sucking on the cold kitchen floor. Yuck! I guess I need to start cleaning more often now.
